Christmas just ain't Christmas without a coconut cake!   This cake has been a holiday treat for decades in our family.  Three layers of decadent deliciousness, with a generous spread of sweet pineapple filling between each layer! Finished off with cream cheese frosting and dusted with sweet coconut. This cake can be stored in the freezer for several weeks and it will be just as good as it was before it was frozen!  It is almost impossible to eat just one piece of this wildly delicious cake!
